To eat a healthy diet instead of completely avoiding meat adding healthier choices to your meals will make a lot of difference. To start, here are some hearty herbal grilling recipes:
1. Toasted tropical tofu
- Pineapple, cut into rings
- 2 lemons, squeezed
- 2 block of firm tofu, pressed and cut into triangular fillets
- 2 tablespoons fresh pineapple juice
- 1 tablespoon brown sugar
- 2 teaspoons of tamari
- 1/4 teaspoon turmeric
- Handful of coriander
- Olive oil
In a bowl, combine the pineapple juice, brown sugar, lemon juice, turmeric, tamari and cilantro. Whisk this mixture to combine the ingredients. Place the tofu fillets on top of the marinade. Carefully turn the fillets over to cover the other side of the marinade. Let the fillets marinate for at least 3 hours. When ready, brush the tofu with olive oil and cook on a preheated grill over medium-high heat for 15 minutes. Turn and grill for another 10 minutes. Remove the fillets from the heat and grill the pineapple rings for about 5 minutes, until nice grill marks appear on the pineapple rings. Serve the tofu garnished with a few pineapple rings.
2. Smoked mushrooms with balsamic vinegar and garlic
- 500 gr of mushrooms, cut into pieces
- 2 garlic cloves, chopped
- 1 tablespoon balsamic vinegar
- 1 tablespoon soy sauce
- 1 teaspoon thyme
- Salt and pepper
Combine balsamic vinegar, garlic, soy sauce and thyme in a bowl. Add salt and pepper. Place the mushrooms in this mixture and mix to coat with the marinade. Cover and refrigerate at least 25 minutes. When the mixture is ready, put the mushrooms on skewers and cook on a grill for 3 to 4 minutes on each side or until they are tender.
3. Lemon grilled potatoes
- 1/2 kg of potatoes, boiled and cut into two pieces
- 1/2 lemons, juice
- 2 cloves of garlic, minced
- 1 onion, chopped
- 1/2 cup fresh coriander leaves
- 1/2 cup fresh Italian parsley
- 4 tablespoons olive oil
- Salt and pepper for seasoning
Season the boiled potatoes with olive oil with salt and pepper. Cook on a preheated grill, cut side of the potato down, for 10 minutes. Transfer to a serving plate. Mix the garlic, onion, cilantro, parsley, olive oil, lemon juice, salt and pepper in a blender until it is smooth. Serve as a dip or on grilled potatoes.
